Magical Chocolate Covered Unicorn Bars

Don't let these unicorn bars fool you into thinking they're full of dyes and preservatives.  The blue is made from sea minerals + blue superfoods while the pink is made from beetroot powder. These are the dreamiest and quite possibly healthiest superfood dessert we've ever made!  Not to mention, they're completely gluten, dairy, soy, and corn free and bursting with antioxidants.

Ingredients

1 can coconut cream

4 cups desiccated coconut

6 tbsp organic maple syrup

8 tbsp coconut butter

Velvet Latte*

Mermaid Latte*

2 cups dark chocolate chips

Directions

1Mix the first four ingredients together in a bowl.

2Portion the mixture into three bowls.

3To the first bowl, add 1 tsp of the velvet latte mixture to get the pink color.

4To the second bowl, add 1/2 tsp of the velvet latte, 1/2 tsp of the mermaid latte to get the purple color.

5To the last bowl, add 1/2-1 tsp of the mermaid latte to get the blue color.

6Add more or less latte powder depending on the vibrancy you want.

7Next, line a tray with baking paper and spoon out the mixture onto the tray, placing the different colors next to and on top of each other until all of the mixtures are used up.

8Press down with a spatula or back of a spoon to flatten it all out.

9Cover with cling wrap and place in the freezer for 3 hours or until hard.

10While the coconut mixture is set in the freezer, melt the dark chocolate buttons in a heatproof bowl over a bot of boiling water.

11Allow the chocolate to cool slightly.

12Slice the coconut mixture into bars or squares.

13Dip each square or bar into the melted chocolate

14Place on a tray with lined baking paper and freeze for 10-30 minutes.

15Serve & enjoy! ⠀

FAB Tip: Make sure to leave these in the freezer right until you dip them in the chocolate.
