Sugar-Free Thin Mint Tart

This nourishing tart tastes just like a Thin Mint Girl Scout Cookie -- without all the yucky additives, gluten, and sugar! It's full of healthy fats, is gluten- and grain-free, and oh so rich! Just one small slice is plenty to satisfy a sweet tooth!

  • Yields: 6 to 8 slices

Ingredients

Chocolate Shortbread Crust

3/4 cup superfine almond flour

4 tablespoons salted butter or palm shortening

3 tablespoons raw cacao powder

2 tablespoons Dietz Sweet

1/2 teaspoon organic vanilla extract

pinch salt (if using palm shortening)

Thin Mint Tart Filling

1/2 cup KerryGold butter

1/4 cup stevia-sweetened chocolate chips (such as Lily's brand)

4 to 5 teaspoons Dietz Sweet

pinch salt

5 pastured egg yolks

1 teaspoon organic vanilla extract

2 to 3 drops peppermint essential oil

Directions

Chocolate Shortbread Crust

1Preheat oven to 350 degrees Fahrenheit.

2Combine everything in the bowl of a stand mixer fitted with the paddle attachment.

3Mix on medium speed until it comes together to form a ball of dough.

4Press evenly into a 6- or 7-inch tart pan, going up the sides.

5Prick the crust in several places with a fork.

6Bake 12 to 13 minutes.

Thin Mint Tart Filling

1Melt the butter with the sweetener, chocolate chips, and salt over medium heat in a small saucepan.

2Add the egg yolks, one at a time, whisking vigorously between each.

3If it seems like the chocolate is going to "seize up", keep whisking vigorously and it will come back together.

4Last, whisk in vanilla and peppermint essential oil.

5Pour directly into cooled Chocolate Shortbread Crust.

6Chill 2 hours or until set.

7Serve and garnish with fresh mint if desired.
