Healthy Dairy Free, Gluten Free Chocolate Pudding

Who knew this dairy, gluten, and sugar free rich chocolate pudding could be healthy and so decadent! This delicious version of chocolate pudding is not only tasty, it's bursting with nutrients; Omega 3, potassium, riboflavin, vitamin C, magnesium and fiber. You can always say, "YES!" to pudding.
- Prep: 3 hrs 10 mins
- Yields: 4-6 servings depending upon portion size
1Soak dates in water for a few hours (I soak them for 3 hours).
2Combine avocados, banana, unsweetened cocoa powder, dates and vanilla in a food processor and purée until smooth, scraping down sides of food processor bowl as needed.
3Transfer to a bowl or individual serving bowls.
4Refrigerate at least 2 hours and up to 3 days before serving.
I blend the avocado, banana and dates together first so I am able to see when everything is thoroughly mixed together and then add the cocoa powder and vanilla
